Lauri McCoy, wife, mother, grandmother, cousin and friend, passed away at home after a brief battle with cancer. Daughter of Lawrence and Melva Hutchings, Lauri was born and raised in Salt Lake and attended Irving Junior High and East High. She received a BA in English Literature from Wheaton College and a MA from the University of Utah, completing all but dissertation toward her PhD. Along the way she met, totally by chance, a young fellow named John McCoy who was a law student at the University of Utah. They married and raised two children, Candice and Michael. Lauri was a passionate Virginia Woolf scholar and studied Woolf’s published works as well as her private letters in New York, and at the University of Sussex. She taught English at the University of Utah and Southern Utah University, and later was a real estate broker. But Lauri was best known by friends and family for her sophisticated cooking and flair for entertaining. Ultimately she parlayed these talents into a successful catering business. Throughout her life Lauri was passionate about the arts; she sang with the Utah Chorale, and enjoyed the ballet, symphony, opera, musicals. Lauri adored animals, and offered a welcoming home to many strays. Lauri is survived by her husband John, daughter Candice, son Michael, and 5 grandchildren.
