Elaine Mary Polychronis Nicolaysen
August 31, 1936 - August 18, 2026
Elaine passed away peacefully on August 18, 2026, just weeks before what would have been her 90th birthday. Born on August 31, 1936, in Park City, Utah, to Sophie and Tony Polychronis, Elaine lived a life rich with love, laughter, and generosity that touched everyone around her.
Elaine graduated from South High School before attending the University of Utah, where she pursued a dual major in Sociology and Recreational Therapy. During her college years, she was a member of the Alpha Delta Pi sorority, forging friendships that reflected her warm and sociable spirit throughout her life.
Elaine was a natural athlete, and family lore holds a special place for the many afternoons she spent besting the boys at whatever game was being played — a point of pride she carried with a grin well into her later years. Her competitive streak on the field was matched only by her tenderness at home. She found deep joy in her garden, coaxing beauty from the soil with the same patience and care she gave to everyone she loved, and her kitchen was always warm with something good cooking, ready to feed anyone who walked through her door.
Those who knew Elaine remember her as a devoted friend and mother, endlessly caring and affable, with a personality that put people instantly at ease. She lived frugally for herself, but when it came to others, her generosity knew no bounds — she gave freely of her time, her resources, and her heart.
Elaine was preceded in death by her parents, Sophie and Tony; her first born son, John; and her brothers, Thomas, Tony, and Johnny. She is survived by her son, Justin (Mary); her sister, Teresa; and her beloved grandsons, Joe and Alec, and many loving cousins, nieces and nephews, who will carry her spirit and stories forward.
Elaine’s warmth, wit, and unwavering love will be deeply missed and always remembered.
A celebration of Elaine’s life will be held on Monday, August 31, 2026 from 6-8 pm at Starks Funeral Parlor, 3651 South 900 East. Guests are encouraged to use the parking and entrance on the north side of the building. Interment at Wasatch Lawn September 1, 2026.

Dear Justin and family. Your mother was such a lovely person and a dear friend to my mother. We were all blessed to grow up in such a great neighborhood on Sands Drive. I used to babysit you two boys! Your home was warm and comfortable place. I loved watching the friendship of my "little" brother with your "big" brother. Your mom was so proud of both of you. Elaine really watched out for my mom as she started to decline and we so appreciated that. It's surprising that your mom made it to heaven first. May she rest in peace and may you have wonderful memories of her and a life well lived.
Elaine was a wonderful woman, mother, sister and friend. It was a true privilege to know her and spend time with her. God has called one of the best home.
