Elizabeth Grace Quintana

March 29, 1925 - May 19, 2021

Elizabeth joined heavenly father and her husband Louis on May 19, 2021.  She died after a long illness peacefully at home with loving family caring for her.  She was born on March 29, 1925 to Frank and Lillian Webber in Langtree, Devonshire, England.  At age four the family moved to Combpyne where she resided on a dairy farm until she met the love of her life and crossed the ocean to America and the desert of New Mexico.  She met Louis at a Red Cross dance in Axminister, an America GI stationed at the army hospital, and began her journey as a World War II war bride in 1945 and was married to Louis for 68 years.

Elizabeth embodied the spirit of caring throughout her life, beginning with caring for sick baby lambs as a child on the farm, taking in every stray cat and dog, and tenderly caring for children as a pediatric nurse for 20 years.  She retired early to care for her mother-in-law and sister-in-law both with Alzheimer’s and eventually caring for her husband, who also had Alzheimers.  She continued to spread love through volunteering in church and community organizations.  She shared her passion for giving with Louis as both were members of the Knights of Jerusalem and worked tirelessly for orphanages in the Holy Land.  The highlight of her life was traveling to the Holy Land and attending celebration of sainthood for Maeline of Canossa in Rome.  Visits to family in England were enhanced by exploring Europe, the Greek Isles and Greece, the Mideast and eventually sailing around South America.  Travels to many states were also her delight.

Elizabeth was a convert to Catholicism and had a deep devotion to the Eucharist and Sacred Heart.  She taught religious education for 20 years, sang in the choir and organized many fiestas at St. Anne and Ascension parishes in Albuquerque, New Mexico.  She joined her daughter and son-in-law 16 years ago in Herriman and was a member of St. Andrew parish.

She is survived by her daughter, Linda Goffaux and was preceded in death by her husband, parents, brothers and son Robert.  Elizabeth is survived by grandchildren Julie Kirschman, Celeste Rosequist (Ron), Francis Burgeson (Brett) Paul Goffaux (Sherry), 28 grandchildren, 26 great-grandchildren and numerous nieces and nephews in England.  Elizabeth left us all with a legacy of love of the Lord and generosity to others, determination and resilience that never let any obstacle impede her journey. 

The family would like to thank Rocky Mountain Hospice for their care and support, especially John, Lori, Diana and Claudia.  Also a big thank you to Frances and Celeste who helped with her care.

A viewing will be held on Thursday, May 27, 2021 from 6:00 until 8:00 PM at Starks Funeral Parlor, 3651 South 900 East, Salt Lake City, Utah, where a vigil will begin at 7:00 PM.  Funeral Mass will be celebrated on Friday, May 28, 2021 at 11:00 AM at St. Vincent de Paul Catholic Church, 1375 East Spring Lane.  She will be laid to rest with her husband at Mt. Calvary Catholic Cemetery. The Mass may be live-streamed by returning to this page where a “Watch Service Live” button will appear before the service.
